Milk contains a protein called beta-casein. Historically, all cows produced A2 beta-casein, which is easily digestible by humans.
However, due to genetic mutations and cross-breeding in western cattle (like Holstein Friesian), a new variant called A1 beta-casein emerged. A1 milk releases a peptide called BCM-7 during digestion, which has been linked to digestive discomfort and inflammation.
Our Desi Kankrej cows naturally produce 100% A2 milk, which is free from BCM-7 and is closer to the structure of mother's milk.
